Lots of pain. It's difficult to adapt or to find another way of moving. Can't lift, can't pick up, can't even carry a box.
So, how to cook for my clients....I decided to go the 'ready made route this week. Here are my menus:

And for Saturday, a reception, I'm hopeful that I'll be somewhat recovered to provide the following menu with possibly carried out sweets.

1 cup warm water<br />
2 shallots, minced<br />
3 garlic cloves, minced<br />
3 T olive oil<br />
2 C dry white wine<br />
2 cans condensed chicken broth<br />
2 T tarragon<br />
1 T chervil<br />
1 T Dijon mustard<br />
pinch of thyme, if possible<br />
pinch of ground rosemary, if possible<br />
1 tsp worcestershire sauce<br />
1 pint heavy cream<br />
<br />
Soak wild mushrooms in warm water for 1/2 hour. Cover and refrigerated the night before making sauce. ( if in a hurry, mushrooms may be soaked and unrefrigerated 1/2 hour before making sauce.<br />
Remove mushrooms from liquid, saving liquid. Finely chop mushrooms.<br />
In a large frying pan, add olive oil, shallots garlic and mushrooms. Sauce over medium high heat until shallots are lightly browned. Pour wine into pan to deglaze and reduce by 1/2 volume.<br />
<br />
Add mushroom juice and chicken broth, then herbs, Worcestershire and mustard.<br />
boil over high heat and reduce volume by 2/3. Then add heavy cream and continue to reduce until flavor is nicely concentrated, adding seasoning salt and more herbs as desired.<br />

Ingredients<br />
4 large eggs<br />
*1 cup Nutella<br />
Powdered sugar, opt<br />
<br />
Preheat oven to 350 degrees.<br />
Line and 8x8 brownie pan with parchment paper; set aside.<br />
Place gas in your mixer bowl and bat for 5-7 minutes or until eggs have tripled in size. This may take up to 10 minutes with a handheld mixer on high.<br />
Heat Nutella in microwave for 60 seconds.<br />
Remove and stir.<br />
Slowlypuor a stream of warm Nutella over the eggs, beating until mixture is thoroughly combined.<br />
Pour batter into prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the middle comes out with very few crumbs.<br />
Remove and let completely cool before cutting.<br />
Dust with powdered sugar. Cut into bars and serve.<br />

This was presented at the chef series at the Chicago Botanic Garden, and it was one that I was NOT going to miss. I love watermelon, but watermelon in anything else is just too sweet for me. I was curious how the chef was going to make this taste. The only reason I'm posting is because it was delicious.</div>

2 T chopped shallots<br />
1 1/2 tsp chopped garlic<br />
1 1/4 c whipping cream<br />
2 T chopped fresh parsley<br />
3/4 tsp dried oregano<br />
1/2 tsp dried basil<br />

12 ounces linguine<br />
<br />
4 slice bacon chopped<br />
4 medium tomatoes peeled, seeded and copped<br />
1/4 c chopped fresh cilantro<br />
1 c freshly grated parmesan<br />
1/3 c crumbled blue cheese<br />

Melt 1 T butter in large saucepan over medium heat. Add shallots and garlic; sauce until translucent, about 2 minutes. Stir in cream, parsley, oregano and basil. Simmer until sauce is reduced to 1 cup, about 3 minutes. ( can be prepared a day ahead). Cook linguine in pot of boiling salted water. Boil until tender and drain.<br />
In a skillet, cook chopped bacon till browned and add chopped tomatoes. Next, add the bacon and tomatoes to the drained linguine. Add sauce to the linguine and place on a platter/bowl. Stir in cilantro and top with cheeses.<br />

Bring it to the boil, then turn the heat down and poach gently for 10 to 15 minutes - one large piece of salmon will take longer than a couple of smaller pieces. Turn off the heat and allow to cool in the water for another 10 minutes. If the skin is still on, you will find it lifts away effortlessly at this point. Put the salmon into a big bowl and mash it with a fork, or use a food processor. gently melt the butter in a saucepan and add to it all the other seasonings - the ground bayleaves, white pepper, cloves, mace or nutmeg and the salt. Stir thoroughly and pour it into the salmon. If you are using a food processor, give it another quick whizz, otherwise stir with a fork until it is thoroughly amalgamated. If you want to serve the salmon pate in slices, spoon the mixture into a loaf shaped container lined with cling film, otherwise put it into a round bowl of souffle dish. Smooth the top and sprinkle with a little parsley or chives for a lovely contrasting colour, and chill in the fridge for at least four hours. Serve with lots of crusty french bread. 1/4 pound butter melted.<br />
6 cups bread, cubed<br />
1/4 cup milk<br />
1/2 cup oyster juice<br />
2 Tablespoons sherry<br />

Drain oysters and remove pieces of shells. Reserve the juice. Pour butter over bread cubes. Place 1/3 of bread in bottom of a buttered 3-cup casserole, then half of the oysters, a layer of bread alternating bread, oysters ending with bread.<br />
Mix milk, oyster juice, sherry, Worcestershire sauce and salt together. Pour over all. Bake at 350 for 30 minutes or till firm and golden. It's very similar to the old Gimbels recipe except for one ingredient and a few other techniques. The sauce, in my mother's recipe, in addition to cream, calls for chicken stock. The Gimbels recipe calls for heavy cream.<br />

<b>Pfister White House Sandwich</b><br />
<b><br /></b>
4 slices bread<br />
16 oz sliced turkey<br />
8 oz sliced fresh mushrooms, sautéed but not browned<br />
Mornay Sauce:<br />
1/4 c chopped onions<br />
1/2 cup butter<br />
1/2 cup flour<br />
2 cups cold milk<br />
2 cups chicken stock<br />
salt and white pepper to taste<br />
3 egg yolks<br />
1/2 cup whipping cream<br />
1/2 cup grated Swiss or Parmesan cheese<br />
<br />
Directions for making the sauce:<br />
In a large saucepan, sauce onions in butter but do not brown.<br />
Add flour and sit well over low heat. Do not let it brown.<br />
Add cold milk and mix till smoother. Add brother and bring to a boil, stirring constantly, then simmer 10 minutes. Add salt and white pepper to taste.<br />
To make the sandwich:<br />
Preheat oven to 325 degrees. Place 1 slice of toast in each of 4 buttered individual casseroles and cover with about 1/4 cup of sauce. Divide turkey and mushrooms among the four sandwiches. Top with more sauce and sprinkle with cheese and bake 8-10 minutes or till light brown. Serves 4.<br />

Instead I used edamame and these were delicious!<br />

2 c. frozen edamame<br />
3/4 c cilantro leaves<br />
1/2 c Boursin<br />
1/2 c sour cream<br />
3 T Tahini<br />
3 T fresh lemon juice<br />
2 T extra virgin olive oil<br />
1 clove garlic<br />
1 1/2 tsp ground coriander<br />
1 tsp Kosher salt<br />
1/2 tsp ground cumin<br />
Boil edamame in lightly salted water till tender. Drain Refresh under cold water and drain again. In a food processor, puree edamame with remaining spread ingredients until smooth, add ing 1 - 2 T of water if necessary to achieve a think consistency. Transfer to a bowl, cover and refrigerate till needed.<br />

2 large cans tomatoes<br />
8 whole cloves<br />
8 whole peppercorns<br />
1 bay leaf<br />
salt<br />
1/2 yellow onion, diced<br />
3/4 c brown sugar<br />
3 or 4 slices while bread pulled into dime size pieces<br />
2 T butter<br />
Put cloves, peppercorns, and bay leaf in cheesecloth<br />
Cook tomatoes underlined, cheesecloth bag, and a dash of salt on stove very slowly for 30 minutes. Stir often.<br />
Add onion, sugar, bread and butter. Place in greased baking dish.<br />

And then, it was full engagement, planning for the Christmas holidays. We had 4/5 of our sons along with a few spouses and we hosted our huge family Christmas party for 67 of us.<br />
<br />
Beginning with December 19, each day was a glorious celebration; until December 24.<br />
The next three days were the most unhappiest days of my life, second to the sudden death of my father when I was 15 years old.<br />
I'm thankful that I have a job to look toward each day which I looked to, joyfully, after our holiday break. I love getting up at 5:30 knowing I have a place to go each day. Each day, I get to be with 5th and 6th graders. I just love them all.<br />
Weekends are a different story.<br />
I had plans to share all my table settings, menus and holiday decor with you. It was all down by December 27.<br />
2016 my husband I also lost many friends. We, like others, were happy to get that year behind us for many reasons. However, 2017 has not been off to a good start. And January isn't over.<br />

Strain the stock into a clean medium saucepan and whisk in the pumpkin puree until smooth. Bring to a simmer and add the 1/4 teaspoon cinnamon, spices, honey and chipotle. Cook for 15 to 20 minutes. Add water, if the soup is too thick. Remove from the heat and whisk in 1/4 cup of the creme fraiche and season with salt and pepper to taste. Mix together the remaining creme fraiche and remaining 1 teaspoon cinnamon until combined. Drain on paper towels. Pour all but 1 tablespoon of the drippings out. Add shallots and cook until soft. Add vinegar, mustard and thyme; whisk to blend. Add oil and whisk to blend. Season with salt and pepper. Keep warm. Combine spinach, pears, red onion and pancetta in a large bowl.
